of osmosis. solvents travel from lower concentration to higher concentration. this is called osmosis. salt water is a higher concentration and thus water content inside the mango moves out, therefore shrivelling it up.

Salt water is highly concentrated that's why it is reserved in mango pickle in a saltwater it get reservation through the water
