A small plant is uprooted and the whole root region is removed. The twig is now placed
in water. Water rises in the leaves though there is no root system. Why?

as the twig is placed in water the water rises up due to capillary action
capillary action is a phenomenon due to which a liquid rises up a tube having a very small bore due forces of attraction between the water molecules and molecules present in the tube called adhesive forces.
the same phenomenon happens when a tissue paper is soaked in coloured water and the tissue changes it's colour to the colour of the water
