The heat is transferred to his hand due to a phenomenon called conduction . Conduction is nothing but a process of movement of heat or even electricity through one medium.

This basically works as follows

When two objects with different temperatures comes in contact the molecules of higher temperature goes to lower temperature .untill both the temperatures are same .

Here ,

The hot iron has high temperature and the student's hand has a lower temperature so heat is transferred from hot iron to student's hand .

This is how conduction works here .
