x is baking soda NaHCO3

(a)when baking soda is added to a mild acid the acid nullifies the affect of Na2CO3 (which is released on heating NaHCO3) by neutralisation reaction. It also releases co2 which makes the cake soft and spongy.

(b) as baking soda is a base it should hav a ph value more than 7.0
