The saliva contains an enzyme called salivary amylase which hydrolysesstarch into maltose. The complete digestion of starch occurs only in the small intestine by the action of pancreatic amylase. The activity of enzymes is strongly affected by several factors, such as temperature and pH.

The stomach is prompted to produce acid when food is consumed for the production of the gastrin hormone. Hence, the acid lowers the pH level in the stomach, switching off the gastrin production which otherwise would lead to hypergastrinemia.
