Soaps from highly saturated, solid fats, such as tallow, lard, or shortening, are hard. Saponification of an unsaturated oil, such as olive oil, gives a soft soap. Treatrment of a soap solution with dilute hydrochloric acid produces a mixture of fatty acids.
