baking powder is added in cakes to make them fluffy and soft..

the main ingredients are baking soda and an edible acid like tartaric acid..

Baking soda releases CO² gas when heated and this makes the cake fluffy...

tartaric acid avoids the bitter taste by reacting with Na2CO3 formed by the heating of NaHCO3.....
