HERE'S YOUR ANSWER⬇
The food when it comes in contact with the air becomes RANCID. In the presence of oxygen in the air, the fats present in the fatty foods are oxidised to compounds which have bad smell. Flushing with nitrogen cuts of the contact of food with oxygen and protects the food from rancidity. When food becomes rancid, then the smell and the taste changes. For example : RANCID SMELL IN OLD COOKING OIL.
