(a)why does a milkman add baking soda to milk? (b)why does it take a long time for this milk to ferment?

a) Baking soda is an base,milk has lactic acid;an acid.
•to prevent the souring of the milk
•to prevent it from spoiling easily
So,to neutralise the milk,the milkman adds baking powder(a pinch oly)
b)Since this milk in now neutralized,it takes a song time to ferment
