Because it's their passion. Whether or not you earn much money, as long as you like what you are doing, then that's enough. Imagine, your dream job is to be a Flight Attendant but your parent wants you to be a Doctor because of the high salary, will you be contented? So probably, those scientist chose to be one because they see it as a calling even if it is  risky job.
