s character of an orbital relates to the relative stability of orbital or the energy of orbital. More s character corresponds to being more closer to nucleus and hence less energy and so more stability.

Acetylene has sp and ethene has sp2. After removing H+ ion, the negative charge on acetylide will be more stabilised due to it being on sp and hence more acidic
