it convets starch into simple substance,.when it is tested with iodine , if we don't get blueblack colour it indicated the absence of starch

Patricster: I don't know about lab test but I know this that on wheat chapatti the action of saliva is that it digests carbohydrates . that's why its said that carbohydrates are digested in our mouth.!!

Saliva contains Salivary Amylase that acts upon carbohydrates.
The saliva on flour would break all the carbohydrates in flour and makes it into simpler substance.
This signifies the action on our food when in our mouth and the process of mastication
