activity action on saliva on flour

saliva contains various enzymes one of them is amylase that acts on starch to break it into small molecules and flour also contains starch hence amylase present in saliva acts on it and helps in its digestion.

Saliva is basically salivary amylase. A carbohydrate digesting enzyme.
However it acts only on boiled starch(a form of carbohydrate such, e.g.-boiled potato). It does not act on flour (ata) since it is not boiled.
