The jaggery is composed of 50% of sucrose. This sucrose is the compound that provides sweet taste to jaggery. The Normal sugar also contains sucrose so that it is sweet. This jaggery is obtained from sugarcane and oalmy tree. The sweet nature of jaggery is due to sucrose concentration in it. Thus when mixed in water changes the water taste to sweet.
