In addition to their reacting with iodine, unsaturated fats and oils react with hydrogen. Like iodine atoms, hydrogen atoms add across the carbon-carbon double bonds. A polyhydrogenated fat is one that has been altered by such a reaction. The reaction may cause the oil to become a solid.
