Fermentation processes may be divided into two systems: submerged fermentation (SmF), which is based on microorganism cultivation in a liquid medium containing nutrients, and solid-state fermentation (SSF), which involves microbial growth, metabolism, and product formation on solid particles in a very small volume of water. In recent years, many researchers have demonstrated that SSF has a large impact on productivity, leading to higher yields and improved product characteristics compared to SmF.
