After cutting from trees why the brinjal black claxy will changes the colour

Due to their iron content,when brinjals are cut and they come in contact with the air, the oxidation starts. This results in their blackening.(  The ferrous ion whose color is light green gets oxidized into ferric ion whose color is dark brown).
