Farmers do so to increase soil fertility. Leguminous plants have Rhizobium bacteria in their root nodules that fix atmospheric Nitrogen into the soil. And, nitrogen is essential for healthy and satisfied plant growth. Thereby, when sowing crops after harvest of leguminous plants, the crop thrives better to give good yield. ;-D
