Milk is converted to curd by the bacteria Lactobacillus. This bacteria multiplies best at a temperature slightly higher than room temperature (which is usually 22-28°C), so the milk must be lukewarm for the bacteria to take effect and for the curd to set properly. Aira used lukewarm milk; however, she left it in the refrigerator. This made the the milk cold, and as a result, the bacteria could not break down the milk sugar (lactose) and cause the fermentation needed to form curd. Lactobacillus does not work effectively in cold temperatures. Hence, the curd was not set.
