Because of different Boiling points of different liquids they cannot be used to measure temperature up to certain limits and other factors are (a) ease of certain liquid detection
(b) Many liquids may stick to the wall of thermometer so measurement become difficult
(c) And many of them may be volatile as well so considering all the factors all liquids can't be used in laboratory.
