Answer:

Because lactose contains a free anomeric carbon, enabling it to equilibriate into the anomeric forms of the sugar. Sucrose, has no available anomeric carbons, therefore, it cannot.

Answer:

Although lactose exists in two anomeric forms. No anomeric forms of sucrose were reported because of the presence O-glycosidic bond in sucrose.

Explanation:

Lactose and sucrose are both disaccharides since they are both made up of two sugar units. Sucrose is generated when a glucose molecule and a fructose molecule come together in a condensation reaction. The hemiacetal of the glucose molecule interacts with the hydroxyl group of the fructose molecule resulting in the formation of an O-glycosidic bond.  Hence, there are no free anomeric carbons available.

Lactose, on the other hand, has a free anomeric carbon, which allows it to equilibrate into the sugar's anomeric forms.
