It is so because,
# Excessive quantity can damage our liver.
# They are required just when the body is tired or the body is suffering from any disease, otherwise, it is just not much useful.
# There is a fixed amount which our body can hold so we should follow just that.

Although vitamins and minerals are protective foods, but they are required in small quantities. This is because:

1. Unlike, proteins, fats and carbohydrates, vitamins and minerals are not considered to be the foremost building blocks for the growth and maintenance of our body. Thus, there is a fixed amount of vitamins and minerals as additional protective foods which are required to be taken.

2. Anything taken excessively causes damage, so do vitamins and minerals when exceeded the limit. For eg. damage to the liver.

3. Vitamins and minerals are generally considered to be paramount as and when the body is suffering from a disease. For eg: Lack of Vitamin A causes Anemia.
