Aluminium is a very reactive metal but the food in aluminum pots doesn't react with the pot because-
- The surface of aluminium is coated with a thin protecting layer of chemical compound (oxide) at standard temperature that prevents the metal from further corrosion. Thus, food do not attack aluminium and food can be safely braised in such vessels.
