51% amount of nitrogen is more than oxygen because We breathe in everything, whether it's a gas or suspended particulate in front of your face, you're getting a lungful of it. Nitrogen is an inert gas i.e. it is stable and doesn't want to react to anything. When you breathe in air, it has nitrogen as well as oxygen. When you exhale, nitrogen comes out as it is but oxygen is absorbed by your lungs and taken into the body where it is converted to CO2 in a process which requires description in greater detail. So the nitrogen levels in atmosphere remains constant with respect to human body, where as oxygen level decreases as they get converted into carbon dioxide.
