An iron knife is dipped in a blue copper sulphate solution turns the blue solution green as iron is more reactive than copper so iron will displace copper from its solution and the blue colour of copper sulphate will turn into green.

so the equation will be

Fe + CuSO₄ ⇒ FeSO₄ + Cu

       (Blue)        (Green)

This is known as Displacement reaction.

Fe +CuSo4 -> FeSo4 +Cu

This happens because iron being more reactive than copper displaces it and hence the colour of the solution also starts changing
