This bacteria is responsible for the setting of curd, however, this bacteria is only active between the temperatures of 30-40 degrees Celcius. Due to the winter being so very cold (depending what country you're in) the bacteria can't be stabilisied in cold weather- so that's why it takes a long time for milk to form into curd during the winter.
