we know that covalent compounds do not dissolve in water ,then why does ethanol dissolve in water and that too in all proportions and even ethanoic acid is dissolves in water to form vinegar

We know that covalent compounds don't dissolve in water . But ethanol does ,
this is because , when we see structure of ethanol it is C2H5OH .
Here -OH gets added in ethanol and it makes ethanol to dissolve in water easily .
And even ethane doesn't dissolve in water
And coming to next point , ethanoic acid dissolves in water because it being a typically weak acid produced hyronium ions in it's aqueous and as it forms ions , it dissolves .
So , these are the reasons for your query .

It is not necessary that all covalent compounds are insoluble in water there are two types of covalent bonds polar and non polar.polar covalent compounds are soluble in water.
