Vegetable oil is unsaturated(alkenes or alkynes) . So when hydrogen is added to it , it becomes saturated(alkanes)

This reaction is known as Hydrogenation reaction.

Vegetable oil -  HAVE LOWER BOILING POINT

Clarified Butter/Ghee(product)- HAVE HIGHER BOILING POINT

Nickel is used as a catalyst in this reaction.
