1. Egg yolk is a source of lecithin, as well as egg oil, for cosmetic and pharmaceutical applications. Based on weight, egg yolk contains about 9% lecithin. The yellow color is due to lutein and zeaxanthin, which are yellow or orange carotenoids known as xanthophylls.
2. Albumen The egg white is known as the albumen, which comes from albus, the Latin word for “white.” Four alternating layers of thick and thin albumen contain approximately 40 different proteins, the main components of the egg white in addition to water.
3. Birds evolved from a reptile. Practically all reptiles that lay eggs in fact do not have hard shells but rather soft leathery shells. The reason bird eggs have hard shells is that most birds incubate their eggs, and therefore the eggs must be able to withstand the weight of the adult bird on top of them. Some reptiles, such as pythons, also incubate their eggs, but they generally do not lie on top of the eggs but instead wrap around the eggs with their reptilian bodies.
