answers:-
→ if sun dissapeared, then:-
1) the sun's presence keeps the planets moving around itself. if sun suddenly disappeared, then Earth and other planets would fly off into outer space. we Earthlings would soon be lost in space!
2) without sun, none of us would even exist.
3) light from the sun takes 8 and a half minutes to reach Earth (approx. 9 minutes). nine minutes later, we'd find ourselves in darkness.
4) we'd notice the Moon suddenly disappear. Why? because moon does not have its own light. we see the moon because the sunlight reflects off of it. as sunlight that was lighting up the moon, disappears, so would be the moon.
5) without the sun's warmth, the Earth would become a much colder place.
6) without sunlight, photosynthesis on the Earth would stop. all plants would die. animals depend on the plants for food, so if the plants would die, animals would die too.
WITHOUT SUN, LIFE IS IMPOSSIBLE ON THE EARTH.
if mercury collided with the sun:-
→There is a very low chance that it might do this.
the sun is more massive than mercury.
mercury would be vaporized/ionized.
Mercury's orbit isn't stable, and it would be capable of breaking orbit and colliding with Earth in several million year.

1) I am going to describe what will happen if the Sun disappears according to time.
First and foremost,
i) It won't take few minutes for the gravitation pull to disappear. What will be the result? All the planets will break away from their orbit and move in a straight line with our own dear planet Earth moving at the speed it revolved around the Sun (67,000 miles/hr).The planets will be floating around here and there.
ii) It would take atmost 9 minutes for darkness to start prevailing on our planet. We will be plunged in to darkness.
iii) This is also happen in 9 minutes. No moon for Earth! We were able to see Moon as it reflected the sun rays falling on it. But since the Sun has disappeared we won't be able to see Moon anymore.
iv) After 2-5 days there will be sharp dip in temperature of planets. With this the human survival chances become zero. And after 4 months there will be no life except someone whom I'll say about in later points.
(Who will survive in -178°C?)
v) What will happen to plants? Immediately after the Sun disappears all plants will stop performing photosynthesis. No food for plants, but they may survive for atmost 3 days due to their stored food and oxygen.
vi) Scavengers are blessed with a month to survive. With all living beings falling dead , scavengers will derive food from their dead bodies. But as I said no life after 4 months (except one organism).
vii) Again some organisms living in deep sea will survive for atleast 2 months. The surfaces of all oceans and seas will freeze but deep under sea there will be some warmth so these creatures will be able to survive (2 months)
viii) Now its time to discuss about the exception . The large trees in forests (tropical) can go for decades! Yes, these large trees will be able to survive without performing photosynthesis, so these are the sole living organisms.
ix) Now prepare for the worst thing. In 1000 years, when the temperature on Earth will stand at -240°C - (-450°C) and everything would be frozen then our earlier warm atmosphere will be exposed to harsh cosmic radiation and ultimately the atmosphere will collapse and so will the Earth. This is something that will happen to all inner planets.
2) Mercury will collide with Sun , get thrown from the Solar system, will crash into Venus or Earth when Jupiter will exert its great gravitational pull on Mercury. If Mercury collides with the Sun it will get dissolved or engulfed by the Sun.
Most chances are of Mercury hitting the Venus or Earth in future. If not then when the Sun attains its red giant stage then it will dissolve the first two planets.
Hope This Helps You!
