Explanation:

The first rising improves the flavor and texture of the bread. From the yeast's fermentation, it takes time to accumulate a volume of carbon dioxide gas during the risings which is strong enough to stretch a bread dough and to hold it high.

The amount starts to increase once the two ingredients are kneaded together. The elastic molecule makes the air bubbles get trapped in the dough.
