Databases are optimized to save just the things that change to disk in a fault tolerant way. Also they are designed, so you can quickly just load the little bits of data you need at any given time. Also, you don't have to use SQL databases.
The most simple answer is we need databases b/c they organize data in a manner which allows us to query data, sort data, and manipulate data in various ways.
