Meghalaya Cuisine : Potato Jadoh
Jadoh is one of the famous dishes you found in Meghalaya. Most of their dishes are of non vegetarian. Jadoh is generally made with rice and pork. It can be cooked with fish or chicken.
But, If you are a vegetarian, potato can be the replacement. For this cuisine, all you need is 2 cups of red rice, 2 cups of potato cubes, a chopped onion, a teaspoon of grated ginger, one or two bay leaves, teaspoon of black pepper, 2 table spoons of vegetable oil.
On heating the oil, place onions,ginger ,turmeric and black pepper gently in the oil and fry them till the oil separates. Once it is done, drop two bay leaves into it, followed by potato pieces and roast them to brown. Now, add 2 cups of soaked rice to it and fry it for 3 mintues. Post that, add 4 cups of water, enough salt, and a pinch of turmeric power and cook the complete mixture for a whistle or two.
Once done, add the corriander leaves to ehance and taste. That's it! The recipe is all ready!
