Specifically it is the stamens. 2 per plant, picked by hand from still growing plants for the best quality and carefully dried to prevent breakage. This is why it's so expensive. If you don't see the entire stamen, you're probably getting turmeric which turns foods almost the same color and is a lot cheaper, but doesn't taste the same.
