it is because when a liquid boils, some amount of energy is required to to change its state, latent heat of vapourisation. thus all the heat supplied is used to bring about state change and thus temperature does not change

Once water starts boiling, all the heat supplied to it is used in conversion of water into steam at the boiling point of water.
Hence, there is no rise in its temperature.
