Avoid heating food rich in vitamin C

we should avoid heating food rich in vitamin c because vitamin C is very unstable which easily destroys in excessive heat water or exposure to air and can be easily denatured.It is water soluble and as such easily leached into the water and gets degraded and so it is recommended that food containg vitamin C should be cooked as fast as possible with less heat and small amount of water.
