Axone, a type of fermented soya bean, is part of the cuisine of Nagaland.

  • Axone, also known as Akhuni.  The word Axone is split into two words as 'Axo' which means aroma and 'Ne' which means strong/deep. So, it generally means ''deep/strong aroma''.
  • Axone is considered as one of the most commonly used fermented product of Nagaland. It is prepared from soya beans by the tribal people of the Noth-Eastern region of India.  
  • These soya beans are also used to make Axone pickle and are added to meat dishes to enhance their aroma.
  • First, soya beans are cleaned and then boiled them until they become soft. Then place them into a pot and put them next to a fire or under the sun for several days to warm or ferment them. It develops a strong aroma in the beans.
