It is yeast, which is a fungus, that acts upon fruit juices and causes alcoholic fermentation. In alcoholic fermentation, the yeast converts natural sugars present in fruit to alcohol.
Over a period of time and if left without disturbance, acetobacter bacteria converts the alcohol to acetic acid. This is called acid fermentation which forms vinegar.
To summarise it is the fungus – yeast, which forms wine (alcoholic fermentation) and the bacteria – acetobacter, that forms vinegar (acid fermentation).
