Tooth decay occurs when carbohydrates (sugar) are left on the teeth after the eating. The bacteria that live in the mouth convert these sugars into acids and causes tooth decay. {bacteria, sugar, acid and other components form plaque and this corrodes the enamel surface forming cavities}

But sugar can be used as a preservative to prevent microbial growth. But how? Can't Bacteria use these sugars and convert them into acids?

Foods can be preserved when large amount of sugars are used. Food with large amount of sugar contain High sugar concentration, as a result water flows out from bacteria present in food to the surroundings due to osmosis thus degrading the bacterial cell and thus acting as a preservative.

But the sugar present in the tooth after eating something are merely left overs and do no significant harm to bacteria.

Note: Osmosis is nothing but movement of water from High water concentration (low salt concentration) to low water concentration (high salt concentration)
