  • Iodine test is done to determine the presence of starch in a given food sample.
  • It is specific for polysaccharides.
  • Carbohydrate – glucose is a helical molecule and iodine can be absorbed in between the molecules. This absorptive property forms the basic principle of iodine starch test.
  • In this test, the food sample is taken in a solution form in a test tube and dilute 2-3 drops of iodine solution is poured into it.
  • If the colour of the test tube changes to blue-black, then starch presence is confirmed.
