The decomposition is not just a matter of heating, which can lead to melting, a reversible change whereby the solid sugar is recovered simply by cooling.

If the heating is continued until water is removed from the structure of the sugar, the molecules themselves are changed, and cooling, even with addition of water will not restore the structures of the molecules.

This is irreversible; even though caramel is sweet, it’s not the same as it was.
