Both aldehydes and ketones react with HCN to form addition product Cynohydrin (in presence of a base). HCN + OH ... But acetophenone does not react with NaHSO3 due to stearic

The Benzophenone would not always form an additional product with the sodium bisulphate. This is mainly due to the presence of steric hindrance.

Explanation:

  • The addition of the nucleophilic group to the carbonyl group would resulted in the change of hybridization from the bond angle of 120 degree (i.e. sp2) to the bond angle of 109.28 degree (i.e. sp3).
  • In simpler words, the substituent would get closer. If there are any heavier substances like acetophenone, then the nucleophilic addition would be stopped due to steric hindrance.
