I think one of the greatest topics would be one which would just about do the function of giving you a topic and not pushing you towards any direction. For example, not many people would have something radically different to say about Ebola.
What would make for a good topic is something like say, "Science" or variations of it. People could put forward in their opinions on its past, present or future. They could talk of its impact in shaping the world. They could talk of organisms, or space age explorations. It could give you a great insight into the way a person thinks. Say if someone gives a rather insipid or generic reply, you can note their lack of inspiration.
The thing is simplicity is like providing someone a blank canvas. They can make buildings, horizons, gardens, animals, humans, whatever they want on it. Now say you give them something a little more specific you keep curtailing the sense of exploration. So probably try to find a balance if it's for a purpose. Otherwise give them their time and see them paint speech.
