A solution is a homogeneous mixture of solute and solvent whereas a saturated son is a solution where no more solute can be dissolved.
When the hot saturated solution cools slowly , the water molecules cool down slowly due to high specific heat capacity. Hence the solute portion of the liquid solution which has lower specific heat capacity cools down faster.
This results in the separation of water molecules from the solute , which separate and solidify in order to form crystals.
