In a nutshell; pressure differentials.

Air, being a gas, is highly compressible, unlike fluids (water, oil) that are essentially non-compressible.

When an object moves through the air or the air moves past an object, some air is slightly compressed which increases its local air pressure, while other parts of the air are expanded creating a lower local air pressure.

Bernoulii’s principal says that moving fluids have a lower pressure than adjacent relatively still fluids. Air resists compression, so to flow past an object some air will speed up, causing a lowered air pressure while some air may slow down causing a higher air pressure.

A wing is designed (evolved) to take advantage of that principal and create lift for a bird or plane.
