actually blue salt of copper sulphate is chemically copper sulphate penta hydrate( CuSO4.5H2O ). blue coloure is due to thiese 5 moles of water . by heating this water evaporates and leaving CuSO4 which is colourless

When blue salt of copper sulphate is heated it loses its water of crystallization to form anhydrous copper sulphate which is colourless.
CuSO4.5H2O=>CuSO4+5H2O
When water is added to the anhydrous copper sulphate it turns back to blue colour.
