Boiling rice, vegetable and daal in excess water and then throwing away excess water is bad. Why?​

Excess water used for boiling vegetables should not be discarded. Because the vital nutrients in the veggies gets released in the water when it is boiled. Hence this nutrient rich water should be used judiciously in soups,gravies. Only requisite amount of water should be used to boil vegetables. When the quantity of water is high,it takes longer time to boil. Hence it ultimately results in the loss of nutrients due to prolonged heating
