It is the process of shrinkage of a plant cell because of exosmosis which is the transfer of water from inside the cell to the surrounding medium as water moves from higher to lower concentration. It occurs only in a plant cell.

Eg. When a plant cell is placed in a conc. salt solution (hypertonic solution).
