Because cotton clothes and paper are plant products and are all made up of carbohydrate, cellulose. Wool, nylon and hair are animals products and are made up of proteins. Therefore, smell of burning cotton or cotton clothes resembles burning paper wile burning wool/nylon smells like hair.
