Burning of charcoal is the process of burning which means it leaves vapour on burning. So, when it is burned its some part is converted into vapour form which is its outer part due to more heat whereas the inner part does not feel heat and so only converts from one solid state to other i.e. from hard solid to molecules. hence we get ashes which is only the molecules of charcoal at the end.
